GAMBERI AL CIOCCOLATO

1 cup finest plain dark chocolate containing at least 70% cocoa, chopped (229g)
1/2 cup milk (118ml)
3 tablespoons extra virgin olive oil (45ml)
2 garlic cloves, crushed
1 lb shrimp, peeled and deveined (450g)
salt to season
1 cup white wine (240ml)
a small bunch fresh parsley, chopped

To start your Gamberi al Cioccolato:

Combine chocolate and milk in a stainless steel bowl. Rest bowl over pot of simmering water. Stir until melted.

In a frying pan heat up olive oil and sautí garlic until soft.

Add shrimp and cook until pink and opaque.

Add salt and wine, and let reduce. Then add parsley.

Plate and drizzle with melted chocolate.
