FAGIOLINI IN UMIDO

1/4 cup extra virgin olive oil (59ml)
1 onion, chopped
2 dried chili pepper, crushed (optional)
2 cups plum tomatoes, peeled (500ml)
salt to taste
1 1/4 lb string beans, tips trimmed (571g)

To start your Fagiolini in Umido:

Heat up olive oil in a saucepan. Add onions and chili pepper and stir.

Cook until onions are translucent and soft. Then add the tomatoes and salt. With the back of a wooden spoon, break up the tomatoes into little chunks.

Add the string beans to the pan, cover with lid and let simmer for 10 to 15 minutes.

Serve hot or at room temperature.
