For me, less is more when it comes to sauces. This is the Italian way. We're not talking about fancy haute cuisine. Italian sauces lend themselves to simplicity and therefore are even economical. Perhaps it's for this reason that Italian cooking is so accessible and, arguably, the most loved food in the world.
Italian sauces are really about letting the taste of fresh ingredients shine. It can literally be as simple as sweet cherry tomatoes and a few basil leaves.
The best tip I can give you is always use fresh herbs. If you have dried herbs, stop reading this immediately and go throw them out!
