COLD COUS COUS

2 cups cous cous (470ml)
1/2 cup extra virgin olive oil (120ml)
2 cups water, room temp (470ml)
2 cups orange juice (470m)
juice of one fresh lemon
cherry tomatoes, halved
1 red onion, thinly sliced into strips or chopped
cucumber, chopped
1 cup of blueberries
1 red pepper, chopped
1 yellow pepper, chopped
fresh basil leaves
salt and pepper to season

To start your Cold Cous Cous:

Add all the liquid to a large bowl, add the chopped ingredients, and salt and pepper to taste.

Add in the couscous and mix well, let sit for at least 45 minutes mixing every so often so the couscous absorbs all the flavourful liquid and puffs up.

It can sit for a few hours or over night in the fridge.
