SARDE ALLA BRACE

24 fresh sardines
sea salt, to season
wooden skewers, soaked in cool water for at least 1 hour, as many as needed

To start your Sarde alla Brace:

Season sardines with salt.

Carefully thread sardines onto a skewer, making sure all the spines line up on one side of the skewer.

Place skewers, spine side down, on the barbeque.

Gently turn the skewers over only once. This way, when you turn the skewers over, the spines will keep the sardines from breaking apart and falling off the skewers.

Cook for few minutes on each side and serve immediately.
