Also known as White Diamonds, this highly prized funghi, comes from the Piedmont region of northern Italy. These truffles have an earthy, woodsy fragrance and a very particular, almost indescribable flavour. They are still handpicked by professional truffle hunters who use trained dogs to sniff out the treasured truffles. Fresh white truffles are available only in season"from late fall to the middle of winter. When youêre buying look for firm, well-shaped truffles with no blemishes. Donêt let them sit; use them as quickly as possible. Serve them simply so you donêt overpower their flavor. Shave them raw over fried eggs as in Fried Eggs with Truffles , or over a simple pasta like Tagliolini Con Tartufo , and enjoy.
