These are red or yellow tomatoes about an inch in diameter that deliver a wonderful sweet burst of flavor. Like regular tomatoes they can be eaten raw or used in sauces. Fragrance is an even better indicator of a good tomato than its color. You want them to have a brightly coloured, fresh skin, free of cracks or blemishes that are heavy for their size. Never put a tomato in the fridge, it destroys the flavor and the texture. You can ripen your tomatoes by putting them in a brown paper bag, in a cool, dark place. |
