Taleggio is a cow's milk cheese. It gets its name from the fact that it once was aged in the caves of Val Tallegio. During its production the cheese is sponged weekly with brine to prevent mould. As a result, the rind has salt crystals in it. In some cases spices, raisins, nuts and some lemons are also added to the cheese. Taleggio is a mild, creamy cheese that gets tangier as it ages. It's a good eating cheese, especially in salads or with fruit, and it melts well during cooking. |
