SWORDFISH (PESCE SPADA)

Nicknamed 'The Gladiator', swordfish is a meaty, slightly oily, firm textured saltwater fish with a rich, slightly sweet flavor. You'll find the light colored meat sold as either fillets or steaks. Both cuts can be pan-fried, grilled, baked or poached. Don't let swordfish hang around in your fridge. It should be cooked within 24 hours.
