SOFFRITTO (SOFFRITTO)

A soffritto often called battuto or trittata, comes from 'sotto friggere', which means to barely or 'under' fry. It's a combination of carrots, onion, celery and garlic that are lightly fried with olive oil and form the base for many Italian recipes. Usually the start to Italian sauces, soups and stews.
