Scamorza is a cow's milk cheese related to mozzarella. It's a stretched curd that is left to mature in its own whey for several hours. The cheese is formed into a round shape and then a string is tied around it and it's hung up to dry, which gives it its unique pear like shape. Regular Scamorza is white coloured. You can also find smoked scamorza, Scamorzi Affumicae, which has an almond skin. Scamorza can be used interchangeably with mozzarella as a table cheese.
