There are lots of varieties of this hardy little red and white member of the chicory family, with tastes that vary from mild to bitter. It can be eaten raw in a salad, but its sturdy enough to be thrown on the grill and served as a side dish or part of an antipasto platter. Radicchio looks like a little red head of lettuce. You know it's fresh when it has a bright burgundy color with tightly packed leaves and no blemishes. Radicchio keeps well, and for a long time, in the fridge. |
