Provolone is a firm textured, full fat cow's milk firm cheese with a sharp and slightly smoky taste. Young provolone is a light cream color that becomes yellow as it ages. This cheese really enhances other flavors and is often used on pizzas and in sandwiches. It doesn't have a long shelf life, so it's best to buy only as much as you're going to need. Wrap your provolone in foil and keep it in the fridge. You can also freeze it. Thaw it in the fridge overnight. |
