These earthy, woody mushrooms with a meaty texture grow wild in Italy. The prized porcini have large umbrella shaped caps and their color can range from beige through to a dark brown. Make sure your fresh porcinis are firm and have a rich and slightly 'woodsy' fragrance. As with all mushrooms moisture is a bad sign. Buy them as you need them, fresh porcinis don't keep well. You are most likely to find dried porcinis in your local store that you reconstitute in water. Once you've opened the package, they'll keep for about a year. |
