Pesto Genovese is, traditionally, made of basil, olive oil, pine nuts and grated cheese, usually Parmesan or pecorino, smashed together in a mortar and pestle. Pesto is used as a pasta sauce, but can be used as a flavoring or a spread. It's easy to make and holds well in the fridge or freezer. |
