Mussels are sold live in their shells: You want to make sure that the shells are tightly closed. Never ever cook or buy a mussel with a shell that is chipped, broken or opened. When you get them home, take off any wrapping to let the mussels breathe. Cook only ones with closed shells. The shells will open as the mussels cook. If they don't open, throw them out. |
