MONKFISH (CODA DI ROSPO)

This saltwater fish is often called the poor man's lobster because its taste and texture is reminiscent of the more expensive crustacean. At the fish market, smell your monkfish to make sure its fresh. Reject any that has a strong or fishy odor. Store it on ice, wrapped in plastic in the fridge, and use it as soon as possible.
