Leeks are a mild tasting and versatile member of the onion family. Leeks can be used instead of onion in flavoring dishes, and braised, they're often served as a side dish. When buying leeks look for clean white bottoms and crisp greens. Store them in a plastic bag in the fridge and don't wash them until you are ready to use them.
