A charming, slightly sweet tasting cheese perfect for eating or for grating, Grana Padano is another Italian product where the quality is maintained by a consortium. You'll know its been approved if you see a four leaf clover stamped into the rind of the cheese. Grana Padano is hard, somewhat granular in texture (hence the name grana, which means grain in Italian) that has been matured for approximately 12-24 months. It's very similar in taste to Parmigiano Reggiano, and, in fact, is often used interchangeably. When you get it home, wrap it in foil and keep it in the fridge. |
