FAVA BEANS (FAGIOLI DI FAVA)

Sometimes called broad beans, fava comes into its own in the spring, when, in Italy, people eat them right out of the shells, when the beans are young and tender enough to be eaten raw. Fava beans with pecorino cheese and a glass of wine can be the perfect summer snack. Other than that glory period, you'll want to take the fresh beans out of the shell and cook them. Favas are also available canned or dried.
