'Extra virgin' is the sign that that your oil was produced to very high standards: cold pressed, from the first pressing of green olives that were harvested within 24 hours. As with wine, the color, aroma and taste of the oil will vary depending on the variety of olive and the region. You'll find a range from a golden color with a fairly neutral taste, to a green tinged oil with a grassy, peppery flavour. Its not unusual for people to have several different types of olive oil on hand-one for cooking, another for using on salads and yet another pricier oil to drizzle on food just before serving. Keep your olive oil in a cool place, away from heat or light. Proper storage is key to its lifespan-it can last from 12 to 24 months, although its taste diminishes with age. |
