The Littlenecks are hard-shelled clams under two inches. You can buy them shucked. If you do, store them in the fridge for up to four days. If you buy them in the shell make sure the shells are tightly closed. Throw out any clams that are open. To clean the clams and to get rid of the trapped sand and grit that is often inside the clam, place them in clean, cold salted water for 30 minutes. The salt in the water will simulate the sea and the clams will open and release the sand and grit.
