CANNELLINI BEANS (FAGIOLINI BIANCHI)

These sturdy white beans with the slightly nutty flavor, are often referred to as Italian kidney beans. These little bundles of protein are endlessly versatile: You can do everything from whipping them up into an appetizer to adding them to a soup or a stew. You can buy them dried or in cans. If you buy them canned, just give them a rinse before you use them. For dried: Soak them overnight, drain and replace the water, and then boil them for an hour or until fork tender.
