Probably the mildest flavored funghi, this cultivated mushroom has a mild flavor and a firm texture that makes it good for everything from eating raw in salads to cooking. Look for firm, dry, clean looking white-beige mushrooms with closed gills. (The gills are the dark part under the cap). Walk on by if they are wet, brown, bruised or have a slimy feel. Store yours in the fridge in a paper bag. If your green grocer does not have paper bags, then wrap your mushrooms in a paper towel before you put them in the fridge. Avoid plastic bags like the plague. Don't clean your mushrooms until you're going to use them. |
