One of the most distinctive Mediterranean herbs, fresh basil, with a taste that has elements of both licorice and cloves, is also one of the most versatile. Throw it raw in salads, add it to a tomato and a piece of buffalo mozzarella (Mozzarella di bufala) and drizzle some Extra Virgin Olive Oil over it for a great salad; smash it with some pine nuts into a pesto; toss it on pasta etc. etc. You can find it fresh year round at your local supermarket in the produce department. Make sure you buy the brightest green leaves you can find. Store it in a paper bag and only wash your basil when youêre going to use it. |
