ASIAGO CHEESE (FORMAGGIO ASIAGO)

Yellowy in color, mild and slightly nutty in taste, this whole semi-cooked cowês cheese is good as both a table cheese and for grating and cooking. Its flavor gets more intense as it ages. Italian Asiago comes from Veneto and Trentino in Northern Italy. Italy has consortiums set up to control the quality of many of its agricultural products, including Asiago, so look for a quality stamp on the rind and, youêll know youêve bought the real thing.
