TODAY'S PARENT...

As a proud papa, I'm excited to tell everyone that our twins, Emma and Giorgia, are featured on the front of Today's Parent magazine this month. I think they make great cover girls, if I do say so myself. The article features some tips about cooking with your kids, and there's also a TP contest for readers to win a copy of my cookbook, David Rocco's Dolce Vita, plus a set of salad tongs from my Olive Wood Line. Since the girls were born last year (time flies -- they are already 15 months old!), many people have been asking for baby food recipes, so I thought it's a perfect time to post one of my favourites here. The dish is something I make at home for the girls all the time and to be honest, Nina and I like it so much, we eat it too. It's simple, healthy, tastes great, and takes no time at all to make.

Puréed Sweet Peas

Add two cups of water and a bag of frozen sweet peas (most supermarkets now carry good organic frozen peas) to a large saucepan. Heat the peas for about five minutes, or until they become soft. Then simply transfer the peas to a blender or food processor and mix until creamy. Let cool and serve. And that's it -- you'll be shocked at how delicious this dish is. You can even make extra to pour in an ice cube tray and freeze. Once you've frozen the cubes, store them in your freezer in sandwich baggies to thaw and serve another time. It's that simple. When your child is a bit older, you can add a drizzle of good extra virgin olive oil and a fresh grate of parmigiano cheese to the sweet peas, too.
