Happy New Year! I hope you all had a great holiday season. Now we're
into winter and it's a perfect time to cocoon, stay in, stay warm and cook some hearty food
that will make the house smell great, and fend off the January chill.
Here's a quick recipe that I came up with last week when some friends
dropped in and I wanted to give them something to warm them up. This takes about five minutes of
prep time and twenty minutes to cook and you won't believe the results. Grab a 450 gr. bag of
split peas, rinse and sort through them, discarding any little stones. Peel and dice a potato
and chop up a couple of cloves of garlic. Put everything into a pot with some salt and pepper
and pour enough water in to cover the whole thing by an extra inch or two depending on how soupy
you want it. Of course you can substitute the water for vegetable broth but water works just fine.
Cook uncovered over medium-high heat for about twenty minutes. Drizzle some good olive oil over
each serving and enjoy! E Da Dio!
This is so good you won't believe it... and the neat thing is it literally
only costs a couple of bucks to serve 4 - 6 adults!
