Today's lunch courtesy of my mom... Yes I'm a mamma's boy she brought me lunch today!
Baccala with olives, capers and peppers.
Dredge the cod in flour and fry until golden. In another pan, add olive oil, chopped garlic, olives, capers, anchioves and yellow pepper. Sautee for a few minutes and then add the cooked baccala to pan along with 1/2 cup of white wine. Reduce and remove from heat. Let rest for 30 minutes and serve at room temp. Mmmmm!
